Breakfast Chia Seed Pudding

So, let's jump right into this breakfast recipe. If you're a skeptic about the whole chia seed pudding thing, don't worry, because I was, too. I had it once, hated it, and never tried it again... until now. I saw this post on Love and Lemons and was inspired to give it another go.





So, there are a few things to keep in mind in order to make a successful chia seed pudding. The first one is sugar. Don't let it scare you. We put such a bad label on sugar, but I believe that everything is fine in moderation (well, most things...). Sugar enables you to eat foods like chia seeds, which are completely tasteless, but packed with good stuff (see below for more info on the good stuff). This recipe uses a half tablespoon of honey, a sprinkling of sugar, and some sweetened shredded coconut. The second key is fruit. Good fruit. Flavorful fruit. Like I said earlier, chia seeds are bland. They need a little something to make them appetizing. Third thing is time. Let these little guys soak in the milk overnight so that they form a sort of jelly. Chia seeds soak in the liquid around them and expand. It's actually really cool. Okay, last thing: milk. This recipe uses 100% cashew milk. It's creamier than skim milk, but still low in calories, so don't freak out!


Now let's talk about all the good stuff in chia seeds. I thought that chia seeds were this weird new invention hyped up by health nuts in the last few years. I was wrong. The Aztecs and Mayans actually relied on chia seeds for energy. They are an excellent source of fiber, proteins, and antioxidants. Plus, they expand in your stomach, so they fill you up quick. Breakfast Chia Seed Pudding

Ingredients
  • 1 tbsp chia seeds
  • 1/8 cup rolled oats
  • 1/2 cup cashew milk
  • 1/2 tbsp honey
  • fruit of choice
  • sprinkling of sugar
  • pinch of sweetened shredded coconut
In a jar, combine the chia seeds, rolled oats, cashew milk, and honey. Stir well. Place in refrigerator overnight.

In a small bowl, combine cut fresh or frozen fruit of your choice. I used frozen raspberries and fresh strawberries. Dust the top with sugar and toss so that all the fruit is lightly coated. Cover and place in refrigerator.

In the morning, add the fruit to the jar with the chia seeds. Add a sprinkling of sweetened shredded coconut to top it off.
