Lemon Crinkle Cookies

Happy Sunday! Today I would like to share with you an amazing cookie recipe! I made these last week and they were so delicious and easy. I love anything lemon. Plus, I have a lemon tree in my backyard, so I have an unlimited supply of lemons (which actually comes in handy more often than you'd think). Follow the recipe below (adapted from Cooking Classy) to make some of these yummy cookies for yourself.

Here are the ingredients you'll need: 
  • 2 cups all-purpose flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 10 tablespoon unsalted butter, softened
  • 1 cup + 2 tablespoon granulated sugar
  • 2 tablespoon lemon zest (I used 2 lemons)
  • 1 large egg
  • 1 large egg yolk
  • 2 tablespoon fresh lemon juice (I used 2 lemons)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar

    Alrighty, let's get baking. After you preheat the oven to 350°, the first thing you'll want to do is mix the flour, baking powder, and salt together in a bowl.

    Next, in a separate bowl, whisk together the butter, sugar, and lemon zest. It should look pale and fluffy like in the picture below.

    Once that's all mixed up, mix in the egg and the egg yolk. Add in the lemon juice and vanilla extract. Set your mixer to a low speed and slowly blend in the dry ingredients. 


    In yet another separate bowl, pour in the powdered sugar. Form a ball out of the batter and roll it around in the powdered sugar. Place the unbaked cookies on parchment paper.



    Bake for 10-13 minutes.


    Let cool, then devour! (And maybe save a few for your friends and family.)
